Loquat Jam


Ingredients (makes 2 small jars)

500mg chopped Loquats (I left the skin on as it was quicker to prepare and provided a little more texture)

150g Sugar

Juice of 1 Lemon

Rind of 1 Lemon

Instructions for cooking:

Combine all ingredients in a food processor and chop / mix for about a minute

Add all ingredients to a cooking pot and simmer for about 45 minutes.

Check to make sure the jam has set by taking a teaspoon out for the pot and placing it on a flat surface – it should hold its shape.

The taste is not as sweet as some jams, so if you like your jam a little sweeter just add another 100g of sugar.
